Nothing beats a good salad!  A good rule to follow is that the darker the green, the healthier it is.  I love adding lots of spinach and arugula to my salad along with some romaine lettuce and other mixed greens.  Top it with bean sprouts, shredded carrots,  and scallions for a side salad, or if you’re looking for something a bit more filling add avocado and feta cheese!  A healthy and easy salad dressing is one part olive oil, two parts vinegar.

Pasta Salad!!   I added:

  1. 1 zucchini
  2. 1 tomato
  3. 1 red pepper
  4. ½ onion
  5. ½ box Cavatappi noodles (twisted double elbows)
  6. a pinch of oregano
  7. salt and pepper
  8. 2 tablespoons chopped fresh basil

As a dressing I used a 1-1 ratio of olive oil and white whine vinegar.
