Savory Dinner Crepes!!! For the batter mix together:
- 1 cup flour
- a pinch of salt
- a tablespoon of sugar
- 1, ½ cups milk
- 4 eggs
- 3 tablespoons melted butter
Let the batter sit for an hour or so before you make the crepes.
I like to saute onions and red peppers in a little vegetable oil, sprinkled with salt, pepper, and thyme. Add a couple handfuls of spinach right before you make the crepes. Freshly grated cheddar cheese is yummy in dinner crepes, and it goes great with tomatoes and pesto. Put it all together and you have a delicious meal!
