Popovers with butter and jam!   These make a great breakfast or snack and they’re crazy easy to make!  Just whisk together:

  1. 2 eggs
  2. 1 cup flour
  3. 1 cup milk
  4. ¼ teaspoon salt

Melt a couple tablespoons of butter and brush each spot in the muffin tin.  Only fill each spot in the tin half way with batter.  Bake in the over for 30 minutes at 375 degrees.  Keep the melted butter around cause you can paint it onto the popovers when they come out!

Homemade Carrot Cake!  Combine (in this order)

  1. 2 cups sugar
  2. 4 eggs
  3. tablespoon of vanilla
  4. 1, ¼ cups vegetable oil
  5. 2 cups flour
  6. 2 teaspoons baking soda
  7. 2 teaspoons baking powder
  8. ¼ teaspoon salt
  9. 1 tablespoon cinnamon
  10. 1 teaspoon nutmeg
  11.  3 cups grated carrot
  12. 1 cup chopped pecans

Bake for 40 minutes at 350 degrees.  I used two 10 inch baking pans and created a double layer cake, but one big cake works too.  

For the frosting whip together:

  1. 12 ounces cream cheese
  2. 1 stick of melted butter
  3. 1, ½ cups confectioners sugar
  4. 2 teaspoons vanilla

Don’t frost the cake until it’s completely cooled.  Top with whole pecans for a more classy look, or dye a bit of frosting orange and green and doodle some carrots for fun!
