6 sundried tomatoes, in oil, chopped
2 tbsp olive oil
1 medium onion, chopped
1 shallot, chopped
2 cloves garlic, minced
8 oz white mushrooms, chopped
1 medium tomato, chopped
1/3 cup white wine
½ cup gardein beefless ground
4 oz dried linguine, cooked according to package instructions, reserve ¼ cup pasta water
Sauté sundried tomatoes with onion and shallot in olive oil for 3 min or until soft, then add garlic, sauce one min.
Add mushrooms and sauté until coated with oil and onions, add wine and tomatoes. Bring to a simmer until mushrooms shrink and are softened. Add pasta sauce, bring to a simmer, and then add “ground beef”. Simmer for 5 minutes, add pasta and reserved pasta water.
Serve with Parmesan cheese if desired.
